Singlespeed cross... off the shelf...
 
Looking at the VooDoo Limba with its sliding drops, but wonder if there is something else that I might have missed...

Looking for lightweight!

Any ideas?

How high do ya wanna go? You could always have a frame custom built for you, or have track ends retrofitted to most steel frames.

EDIT: I failed to notice that you were looking for an off the shelf bike.

Do you mean by, "sliding drop outs", track ends like on a track bike?

It's probably a good idea so that you can change a good variety of cogs for any given race terraine. I am not sure what else you may be missing.

Is there some reason that you're not looking into having a shop build you a bike from a good frame and components? It sounds like you'll be dropping some serious coin on this bike, and I think that you might be limiting your options by looking only for an off the shelf bike.

The sliding dropouts are unlike anything that I've ever seen before.

Should have clarified: off the shelf frame. (i.e. do not want to go custom for dollar reasons.)

I will be building the bike myself:

Ritchey WCS Fork v. Easton EC90 CX
Phils laced to ceramic Open Pros
Paul Levers and Cantis
Thomson seatpost and stem
Selle Italia SLR

Unsure about bars. If I go drops, I will get some aero levers.
Plain ol' Race Face LP cranks.

Have you looked at the Il Pompino?

Edit: Oh, you're looking for sliding dropouts and lightweight. This may not be the bike for you.
