Flat Bar and Grip Shifter (and rear derailer for grip shifter?) Recommendations?

Cyclocross and Gravelbiking (Recreational) This has to be the most physically intense sport ever invented. It's high speed bicycle racing on a short off road course or riding the off pavement rides on gravel like : "Unbound Gravel". Flat Bar and Grip Shifter (and rear derailer for grip shifter?) Recommendations?

Any recommendations for triple-crankset, 9-speed grip shifter? I was wanting to replace the 7-speed grip shifter on my 1995 Trek 730, to accommodate an upgrade to a 9-speed cassette.

Will a special rear derailer be required with the recommended 9-speed grip shifter, for an Ultegra 12-27 cassette? If so, then recommendations for a specific rear derailer?

And is there a recommendation for a flat handlebar, to put the grip shifters on?
