I'm going to be using this for winter beater/trail riding and maybe a cx race or two...

Obviously it depends on the hills you want to ride. I think a 38T or 39T would be great with that cassette.

I race with a 12-27 and pretty much leave it in the 39 ring, so I think that would be pretty good. MA is a bit hillier than MD, but 39x30 should be pretty good for almost anything short of a true hill climbing ride.

Is the crank shot, or just the rings?
If the crank is still good, you could probably put a 110 bcd FSA ring on there with 39t and use the outside ring for a chain guard. Might look a little funky, but it's a cross bike!
Harris Cyclery also has 39t 110bcd rings from TA, which are nice, and "Rocket Rings," which are cheap.

Also.... this is how I decided what size chainring I wanted. https://www.sheldonbrown.com/gears/
I put in 3 different chainring sizes coupled with cassette I will run and compared it to what stock cross setups would be.
