A fair price is whatever a willing buyer and seller can agree on.
I tried to look up original retail prices for that trike but I couldn't find one. I'm guessing it probably sold for around $1,200 but that's just a guess. My rule of thumb for used bikes is to start at 50% or retail price and go from there. That would be $600.00.
At 7 years old and with only 50 miles of use, I'm thinking this trike has negative utility to the buyer. He gets zero benefit from it and it takes up storage room. He'd actually be better off if you carted it away for nothing. How badly do you want it? If I wasn't worried about insulting the seller, I'd probably make around a $250.00 opening offer. I definitely wouldn't go over $500.00 all in price.

Which type of Sun trike are you writing about? Sun uses the SX label on both delta and tadpole 20" wheel trikes. Two older models are: Sun EZ-Tri Classic SX Delta Trike $1200 new. Sun EZ Tad SX - Comfort Trike $1500 new.
While sun makes decent trikes and uses name-brand components, the biggest downside to them is the WEIGHT. Most 20" wheel tadpole trikes (except for entry level models) weigh around 36 pounds and some weight less. The "Classic delta SX" is very common as a used trike. Here's one for $350 on the Denver CL but notice the weight is 60 pounds!!!. It is probably worth it to get into riding but you would soon prefer a lighter trike once you encounter some decent hills. If you do a nationwide search for the SX models the prices are often $700 to $1,000. I'd be really hesitant to spend more than $500 on a heavy trike unless you live in very flat country. With fall coming, some of the prices may get a bit more reasonable as demand drops. Early Fall up until just before Christmas is a good time to buy. Wait until Spring and prices go back up as demand increases.

You guys are awesome. It's described as EZ-3 USX Trike,Comfortable "delta" trike (meaning 2 wheels are in the back). Practically new: less than 50 miles, great condition. Heavy duty. Rear disc brakes. Shimano derailers, 21 speed. They said it goes for $1500 new? Your feedback is extremely helpful. I appreciate additional thoughts you may have?

I'd make a $500 offer.... Otoh, if it's what works for you, in perfect condition, maybe a $750 max. But at 7 years old, even with only 50 miles on it, it's not in perfect condition. The tire rubber has aged, so you're not going to get max mileage from them any more, not even if it was kept inside for those 7 years....
Just my 2 cents worth. YMMV.

As with any used bike, there's no warranty. You wouldn't be the original owner. That is one reason why it's only worth half the new price.
A delta like that is heavy and not particularly easy to push down the road. It's mostly meant for riding around the neighborhood or up & down rail trails. Don't buy it based on the line that recumbents are fast.

Sun Recumbent Tricycles (Trikes) Sun USX Recumbent Trike at the Bicycle Man
You can read about it here. If the owner says "heavy duty" then it probably is the Sun trike for riders who are over the recommended weight for ordinary trikes. It weighs 65 pounds without any added accessories like water, minor tools, a lock, and spare tube and a pump. 50 miles in 7 years may give you an idea as to how hard it is to pedal this much weight. Most of us avid trike riders struggled with going up steep hills when we first started out and weren't trying top to propel anything this heavy. It's a tough choice because the cheaper trikes are generally heavy and have limited gear ranges that you soon outgrow. The light ones with great gear ranges cost a lot.

All of the above is quite true. But......remember that there are purchases made on spur of the moment on emotion. Sometimes these purchases come home and get use once or twice and the novelty wears off and they just sit until the owner decides to sell them. I have bought a couple of real nice bikes that were as nice a any show room model and I am talking about high end bikes. They are out there so low mileage is not a good reason to pass on a purchase.

I pretty much fell into becoming a Sun owner. We have been cleaning out my in-laws' garage to make space for things in the house. The bike was buried underneath "stuff" that was stacked up to track height. The bike is a 2002 Sun EZ-3 trike that weighs in at 60#. After replacing some parts and bringing it back to riding condition, I am on the fence when it comes to keeping it. I am used to a 2007 Raleigh Grand Prix, and rode it on the Katy Trail with my cousin back in May. Cost-wise, it has just been the repair costs. After the KT, the soft seat sounds good! But 3 wheels already!?

Our Sun EZ-3 Is now 11 years old, got It new at out LBS for $700 plus tax. It Is still In new condition.
I see them now new for $1100.
I paid $500 11 years ago for the EZ-1 and sold it like new about 5 years ago for $700
All we ever did was change the tires and brake pads on those bikes, lubed the cables and kept things adjusted, never a problem,,,
My EZ-1 was sold to pay for a like new Sun made Tour Easy LE,,,
