I have done a 4 day tour on a Tour Easy, and have to say it is a great bike for touring, commuting, and just about anything else. Any recumbent is going to be slower up hill, but you can easily make up for that on the downhill. Is is not a problem to do 60 miles a day or more on a Tour Easy with minimal pain.
That being said, I plan on someday crossing the county on a trike. I have a Trice t, which is designed for touring, and it is just about the most fun you can have with all your clothes on. The comfort surpasses even the tour Easy, and that is something to consider on multi-day tours.
