...some ******* has now ignited a large brush fire three or four times in a two week period along the bike trail at Cal Expo here. I'm with the dog. I ride the other direction now.

I have a dachshund. Fearless dog, not intimidated by anything, not even fireworks.
(Well truthfully she's intimidated by BBQ tongs. It's the only thing on Gods green earth that scares her.)

Now that is an interesting proposition that I considered today. I was walking through the store looking at the brisket, thinking....maybe I'll just do salt and pepper with mesquite.
However....

In the end, I rely on my guests to tell me what they like and what they don't like about my smoke.

If I went to a Veterinarian could he/she do as good of a tooth check-up and cleaning as a real dentist?

I am not a connoisseur of my own cooking. I can rarely taste the variances of cooking and recipes. When I smoke, I can taste that and the differences in the smoke. But, the bark and the flavor of the bark, unless it gets too spicy, all kind of tastes the same. And, as I understand it, the rub should compliment the meat. Assuming that is the case, maybe I've achieved the goal. A nice crisp bark with flavor that accents the meat.
In the end, I rely on my guests to tell me what they like and what they don't like about my smoke.

Speaking of roadtrips...I'm doing the Adirondack Cycling Tour at the end of August...500 miles in 7 days.
Glamping. Open bar every night, gourmet food every day. Someone else sets up and breaks down camp...

I wish.
This should really be the Information Age, or the Digital Age, or the Internet Age (those being the defining technologies for progress and civilization right now). They're mostly relevant to bikes in the realm of design, though, as opposed to materials.
