Question about Packing Your Essentails for a Ride

I have a usual saddlebag. But I also wear a backpack. Do you wear one? Mostly I just have a ton of water bottles and my keys, phone, and wallet. But I'm getting a little tired of wearing all of that on my back. I think I'd rather just use my water bottle cages. I have most of my stuff in the saddlebag. But still can't fit my basic things like phone and wallet.
Do you wear a backpack or something similar? Of course if I got rid of all the water, it wouldn't weigh me down as much. I like to pack extra water, but come to think of it, I can just fill it up as I make stops.
There is this one large saddlebag I'm looking into, but it got bad reviews. The Leyzeyne L caddy.

Ride kit: two plastic tire irons, a spoke wrench, 3 small hex wrenches (replaced with a multi tool for long rides away from home), a spare tube, sometimes two for long rides, a dollar bill, and a business/ID card. For shorter rides that don't require two water bottles, most of the repair kit lives a ziplock bag in an old water bottle that has the top cut off. It goes in the rear bottle cage. For a two water bottle ride ( one water, the other a diluted electrolite mix), the repair bits live in jersey pockets. Cell phone in ziplock bag w/a bank card in the right rear pocket, small crank bros. handpump/mulit-tool and tube. in the left. Middle is for clothing.Sometimes the pockets can get a bit crowded if arm/knee warmers/toe covers and a light nylon vest are involved and layers need to be shed, but even then it's no big deal. Extra food can fit as well. Travel light, travel fast. You'll be ok.

Here's a related question. Does anyone use any kind of small bag to organize everything that you put in your jersey pocket? I use a small seat bag for essentials (tube, co2, tire levers) and the main reason I do is because I'm afraid I'll forget something essential if it's not always strapped to my bike. But if I had a bag that I could keep that stuff plus multi tool and just have to worry about grabbing that one pack and sticking it in my jersey pocket I might be able to convert to be a cool kid

I used to wear a Camelbak but since I got my road bike and have two water bottle mounts I haven't worn it since and love it. As far as carrying the essentials...
-2 bottles of water, usually both with Nuun tablets because the help the water taste better.
-Saddle bag has: tire levers, 2 spare tubes, 2 CO2 cartridges and inflator, tire boot, multitool, and very lightweight lock for quick stops so someone can't just walk/ride off with my bike
-On rides longer than ~70 miles I attach a small top tube bag to carry more food/gels/chews
-Jersey pockets -- pocket 1) bars/chews/gels, pocket 2) phone, Nuun tablets, more bars if longer ride, pocket 3) keys, more bars if longer ride

I ride a small saddle and have big thighs. Saddle bags wear out my cycling shorts. I find a ziploc freezer bag (available in many different sizes) works well in my center jersey pocket. I carry 3 CO2 cartridges, a multi tool, patch kit, tire levers, allen wrenches, Fizz container, cash... Any ziploc will work, but freezer bags are much heavier and last longer.
