Other than feel, what does a mid depth wheel actually do for you?

Notices
Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

I wouldn't call CF wheels noisy, but they do sound different than aluminum.

I personally like the noise they make other than the occasional brake squeal and it seems the deeper the wheel, the more amplified the noise, maybe not? I've heard the echo hubs on these new Easton wheels are quiet but a youtube video of them sounds like the swarm of bee's similar to a Cris King hub.

Definitely the deeper the wheel, the more amplified the freehub noise. I find it annoying.

On the plus side, all you need to do is coast a couple seconds to let slower riders know you're there.

Right, but you have to hope they aren't packing heat.
