Lemme hear the magical potions and quick fixes that you go for when you decided to not turn around after you realized you forgot food and didn't want to stop during the ride at a servo station....

Electrolyte water - sugar water, salt(some in) water. Wait 30 min. Carbs. Water. Then the veggies and good stuff.

I'll eat anything real. Leftover eggplant parmesan, tuna and veggie wrap, hummus with veggies and flatbread, hard cooked eggs, always have a container of pasta in the fridge, rasins, dried apricots, etc.
No fake food - expeller pressed bars or powdered drink mixes. Five years ago I swore that I'd never eat another Cliff bar as long as I live.

Most 50-mile rides I only drink water anyway, and how much, depends on the temperature. But I never leave home without enough, and a couple Powerbars. I just don't. Powerbars are in a bag on the bike, and water I just never forget, because it matters. And if you would rather dehydrate than stop at a store, that's fine.
If I didn't pass a store I might have looked for a faucet outside a school or church, and if didn't see any, or a stream or whatever ... I guess I would ride a lot more slowly.
I have filled water bottles at the faucet outside a store (once I made sure it was not gray water.) --- not because I was out of water, but because I was doing 80 miles in July in Florida and I wanted to have all my bottles full all the time.
After the ride ... same as after any ride. Electrolyte drink (diluted by about half) and water, whatever kind of meal, about 1/4 to 1/3 protein ...
Anyway ... the best part is that this is all interesting material for your autobiography. "There was that one time I was fifty miles from, anywhere, with no food or water ... I used my mini-pump like a javelin and stunned a squirrel that was sitting beside the road. I roasted its flesh and drank its blood ... and that is why I survived to be here today, telling this story."

I have acclimated to longer rides for 40-60 miles. I no longer eat anything on the ride, not even Clif shots or whatever. But I still use an electrolyte tablet in water bottles. If the ride is longer than 2.5-3 hours, I'll have Endurox R4 to help with muscle recovery and a few nuts. I try to avoid eating more sugar than what the R4 provides.

Standard recovery shake followed up by a meal of pasta or rice an hour or two later to get ready for the 75 to 100 miles tomorrow.

By the time I'm finished with a 50 miler, I'm usually jonesin' pretty bad for a smoke, that is if I forget my cigs while on a ride. So that means 3 or 4 right after the other. Then I'll go in and swish down the cold coffee left over from the morning's pot. After that it's something a little healthier, such as a couple of Little Debbie Oatmeal Pies and about a liter of cold Coke or Pepsi. Then for dinner it's pizza and tater tots.
