So, does someone market a sensor that's Ant+ and maybe BT as well so I can monitor my water bottle temps from a phone app or head unit?

This is the blackest water bottle I have - goes with everything. (mine doesn't have the yellow nipple, though.)

Same wornness, I guess, just a different color perception. The contact areas look silver/grey (pewter, graphite, whatever) instead of black like they do on clear bottles.

Grrrr. No, ...they really don't heat up water. That's more LBS bull. I've used black w/bs for years, excellent.

There is a local (to me) guy that sells them on eBay, two sizes, nice quality, and they don't leach plastic taste. Single Black LDPE Plastic Water Bottle 28oz 750ml Bike | eBay

I don't doubt that you've used black bottles with great success. But in the presence of the sun (or any other radiative body at a higher temperature than the bottle) they will heat up more than an equivalent bottle of another color.

As a previous owner of a black automobile, I'm averse to the very notion of a black water bottle. Saying that a black water bottle won't get hotter than that of another color is akin to saying that compared to other colors, a black car won't get hotter... and I can state with great certainty that is not the case. Dropping into the driver's seat on a July afternoon was like getting into a pre-heated oven. In a southern California summer, I'm quite certain you could brew tea in a black bottle.

That said, TacX and a few others have all-black bottles on eBay. It's not as if they're hard to find.
