I just got back from doing Ironman France. I did not finish the bike. Killer course with 9 major climbs. I live in N. AZ and there are no hills like these. Any thoughts on training for hills when you can't ride them? Thoughts on using a spinning bike to build climbing strength?

I'm not an expert on this, but I bet a heavy bike with knobby tires would do what you want even on small hills. The heavy bike would be harder to pull up a hill. The knobby tires would be more rolling resistance.
A trainer may help on hills, but I am not sure how much. Maybe one of the other guys knows from experience.

The only real training for mountains is mountains. Its different to riding into the wind.
Take a long weekend to the mountains and ride some big passes.
