2018 Domane
So the Trek web site is some 2018 models. Within the SLRs, goes up to SLR6... Do they eventually launch higher end models (SLR7, 8 and 9) or they don't offer new models every year?

The 2017 came available as 7, 8 and 9 so I assume they 2018's well at some point as well. Still very early in the model year.

Trek, along with many manufacturers run a model year that's July 1st - June 30th (ish). Usually they'll announce their new bikes right before the TDF. The bikes themselves, trickle into the stores from as early as late May through mid-November.
There's a lot of variables, though, Project One excluded.
Some colors might not be available right away, or significantly later than others (same with sizes).
Honestly, your best bet is to wait till October-November and try to score a previous year model. They're heavily discounted from Trek to retail stores (heavily) and if your size/color is available from one of their three warehouses (California, Wisconsin or New Jersey) you might be able to save some cash. Already in-store models, less of a discount.
Also, Trek moved away from officially calling the bikes "2017" or "2018" as outside of paint refreshes in some cases their isn't really anything different on them, if there hasn't been a drivetrain refresh from Shimano. Obviously that's not the case right now, as there's new Dura Ace and Ultegra. I suspect we'll see new 105 in stores by this next year (if you look at historically data for refresh cycles).
