Thank you to @Elvo as well, but it doesn't simplify things for me. I'm more interested in what group to buy in: 1) close to $2k name branded big R&D budget or 2) close to $1k no name presumably low R&D budget.

I am on board with this. Good bikes but boring. Generics are also boring. Give me the boutique brands all day long. Colnago, Masi, Boardman, Cube, DeRosa, Willier, Kona, litespeed, Lynsky, Look, Time and etc. are all awesome bikes that stand out.
Now, I'm no fan of Giant, Specialized or Trek. They're good bikes.. but, I just see too many of them and frankly I find them plain and boring. But, that's just my opinion. I was also looking for a CF with 105 parts and ended up getting the Canyon Endurace CF SL Disc 7.0 just last week. (Took about a week to ship from the west coast to the east coast)

I'm pretty happy with the bike. It's pretty much all 105 parts with no mix and match of cranks or brakes to save costs.
My other choice was a Ribble CGR with 105 components.

What I did (which I am quite satisfied with) is simply buy a later year model name brand bike, you get the price of an off brand with the feeling, warranty, and such of a name brand! My Specialized Tarmac Expert from 2016, never used, with nearly full Ultegra (carbon FSA crankset) cost 2k on the nose while the 2017 (I purchased this in 2017) cost nearly 4k, that's one hell of a deal.
Frankly, I wouldn't feel satisfied buying a cheapo off brand bike, not putting in that level of commitment may impact my training and goals in general. This is simply my opinion however, conversely, I'd even be a tad angered if you were the type to have almost no cycling experience and immediately purchase a 10k super bike.

I was going to suggest the Fuji Gran Fondo 2.1 ($1799) with full Ultegra or 2.3 ($1499) with full 105. I just picked up the 2.3. The first thing I did was swap out the OEM wheels for some lighter ones. Great improvement and didn't cost me much. Very happy with the 105. My "race" bike has Ultegra and the difference in shifting is minimal. Not too concerned with weight since I'm not a racer but I think I'm in the high 17s or low 18s pounds.
