2 shirts is cooler than one?
someone please explain how wearing an undershirt is supposed to keep one cooler. I know what wicking means, but isn't that what the jersey does already?

A wicking undershirt can keep you drier than just a jersey. On a long climb when you're sweating a lot, the undershirt will keep you dry on the downhill so the sweat doesn't chill you.
On a flat ride that will be hot all day, an undershirt doesn't help much.

I always wear a shirt under the cycling jersey. Helps equalize the range in temps one often experiences, especially on a long climb, then quick descent. In extreme heat, over 90F the shirt gets soaked and keeps me cool, on cooler rides it feels wonderful and snug, coupled with bib shorts, as opposed to just a thin jersey. Just my preference.
