Advice on Selecting a New Bike

I am looking to upgrade to a "real" road bike from a "hybrid" road bike. I am currently riding a Giant FCR (mostly all road components but with a flat handlebar design).

The bikes I am looking at are: Trek 1000, Trek 1500, and the Trek Pilot 2.1, in addition to the Giant OCR series. The price of the Trek 1000 is friendlier, but bike shop says that if I continue to get better I may not be happy with it in a year or two. The design of the Trek Pilot sounds intriguing.

I am very inexperienced with parts, components--all of the stuff you guys are pos about all the time. Anyone willing to offer insights or recommendations would be appreciated.

Current riding status: 100 mi per week, 15 mph average (looking to get better), age 45, very fit.
