Specialized 2006 vs 2007 Roubaix Comp
Which would you choose:
2006 - $1760
2007 - $2200 (all 105 I believe)
Riding mostly charity rides and 30-40 mile training rides.
Also, how much difference between 50x39x30 vs 50x34 compact for the easy pedalling gears?

Well you are getting the same frame and pretty well the same component group. Only difference I quickly picked up was the cranks and the wheels. I'd be more comfortable with the shimano wheels on the 06, over the Specialized hubs on the 07. You could swap out the FSA cranks on the 06 for the Shimano compact cranks, that everyone seems to prefer. I'd say get the 06 and save youself some dough...

I like my 06 comp. Some of the componentry is better (ultegra rear), though some don't like the FSA cranks. (so far so good with mine). My compact is 50/36. I test rode a triple and didn't like it as much. I'd go with compact over triple any day unless I need to do some serious climbing. Note that the 06 saddle sucks, so you might want to swap that out. They made some improvements in 07, but other 07 specialized saddle models are more comfy IMO. The 2006 is a good price. I'd say get that and use the leftover cash to do any upgrades you might want.

Hmm interesting decision. I had the 2006 and it is a great bike...of course I never rode it in the stock form...I stripped it and built it up with Campy thou I kept the FSA cranks...never had an issue with them.
You 2006 price is what I paid at my LBS in Dec of 2005 and the 2007 price is retail...I wouldn't pay retail...they can give you 10% with no issue. Looking at the spec of the two bikes I will say that I prefer the Shimano crank to the FSA...Shimano stuff just shifts better...not that the FSA was bad (again I never had an issue). As for the Ultegra RD it just doesn't matter. To me the BIG thing you get with the 2007 is better wheels.
The fork and frames are identical on these bikes so the base is there on either bike...buy the 2006, sell the wheels for the $150-$180 you would get for them and buy better wheels...or see if the LBS will trade in the wheels at time of sale for something better(plus additional cash).
Here is my old Roubaix:
