Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Advise on a carbon fork needed!

What is the maximum amount of torque I can put on carbon steerer tube? Is there a general rule on this?

What are you trying to do to said fork steerer? Steering doesn't require much torque at all, so I can only imagine you're trying to get a stuck stem off???

Sorry for not being clear, I'm simply installing a new stem on the bike but was told that I shouldn't apply too much torque as the carbon fork might snap! Not knowing any better I figure I should do some research before doing anything stupid and wreck the fork...

Because an aluminum steering tube is indestrutable and you can mash it, beat it , over torque(?) it with no ill effects? The torque setting should be on the stem, and is the same regardless of the steering tube material.

If you're talking about tightening the stem, most of them have torque specs in the 5-8NM range.

I used to torque to those levels, now I just tighten it until it's tight. Haven't broken a steerer yet and nothing has come loose in use.
