When you guys ride/train....
Do you guys like to go uphill/downhill, downhill/uphill? To make my question more clear, I am not talking about big hills or canyon rides but on normal streets.
On the route I take, I start off heading south while riding against wind. My average speed is about 16-17mph but when I come back, I take the same route and its a lot easier to ride. I averaging about 20mph...

I'm not entirely sure if I understand your question
But I think the answer is - I try to go uphill or into the wind when I start out (if I have a choice) because then its usually easier on the way home. But then, pretty much everywhere worth riding too is uphill of my place so that makes the choice easy....

The speed does'nt much matter to me. Im more concerned about keeping my HR in the proper zones for that ride. One of my rides works like this: ride to the hills is a warm-up, do intervals up the hill, rest down, repeat, after Im dont with the intervals/repeats the ride back home is a cool down.

Always uphill/downhill, in Golden, I am always going up canyons, mountains first, then fly down them. My problem is I live about 400ft above Downtown Golden so whenever I go for a fun ride, it always ends with that little climb.
I think its PCad on this forum that lives at the top of some horrible climb, I would move
I gte my workout in then enjoy the flying.

Typically it's slight uphill -> massive uphill -> downhill -> medium uphill -> flat -> slight uphill and then I'm back home.

Downhills are my reward for dragging my fat ass up hills.

Flat as a pancake here, but the prevailing wind comes from the southwest. I usually try to head into the wind first.

Thanks for the replies.
Is it better to do short hard uphill/downhill or long flat road riding to cut fat and gain muscle?

Long uphill. Not short.
Long flat road will give you the endurance for your muscles...

Sometimes you can. If I ride from my house, I dont have much choice but to head north. But if I have the time & inclination, I can drive about 5-10 miles to some nice rides where I can go in any direction I want (hills are less controlable, but I basically live in a valley, so the uphill/downhill usually works out unless I go to a different area).

These days, if it were my choice, I'd ride uphill or flat ... no downhill.
If your goal is to lose weight, ride long distances over all sorts of terrain.
If your goal is to gain muscle, lift weights.

Its effort spent, not altitude gained. Since you are just getting into it, I'd suggest hill repeats. They will force you to work and out of you comfort zone.
