Got a Campagnolo Short Cage Rear Derailleur
Going to use a shimano cassette with JTEK. What chain would I need? i want to go with the cheaper shimano ultegra chain but I am not sure how that will work with the campy RD

I'd say match up the Shimano chain with the Shimano cassette. The derailleur only really interfaces with the chain at the pulley wheels, which work well with just about any standard chain.

I'm running a shimagnolo drivetrain with no problems since I aligned my RD hanger.
Shimano cassette and chain. Campy shifters, fd, rd, cranks, and bb.
Works like a charm. I've raced on the setup too and it worked fine.
Note: I'm not running a shiftmate. I don't think I ever will on this setup either.
