Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Maybe $600? The seller will probably expect more (and might get it in certain bike-crazed markets like Portland's). As a buyer I wouldn't go much higher. It's 5 years old now and it certainly isn't that hard to score a 105-equiped used bike.

I paid $800 for my '05 in the fall of '06. It had under 500 miles at the time.

$500-$600. It may be interesting to note that the 03 Giro is Italian-made "Reparto Corse" steel with no rack/fender eyelets while the 04 and onwards are Taiwan-made Reynolds 631 w/ eyelets.

Incorrect. You are thinking of the 'shared' Imola/Vigorelli/Veloce/Eros Reynolds 631 frame. My Giro is a Reparto Corse SL3 Alum frame with carbon stays. The '03 is likely a similar Easton superlight alum with carbon stays. It had a horizontal TT, but I don't believe the Giro was ever one of their steel models.
