cassette obsolescence

do you think shimano 7 speed cassettes will be impossible to buy any time soon? i'm wondering if i should stock-pile some.

depends on the ratio. a 12-28 or whereabouts will be easy to find for a while because cheaper mountain bikes still run these. something like an 11-21 is already getting hard to find.

I think youll always be able to get them but they will be caried by less and less people.

No need, you can just crack open 8/9/10-spd cassettes and use the cogs individually with 7-spd spacers to make a 7-spd cassette. There's a tiny bit of difference in the cog-thicknesses, but it's close enough that it works with 7-spd spacers just fine.

7-speed cassettes are still used in some low end POS bikes from big box stores. No, I am not getting them confused with freewheels.
