Does anybody know the correct stem length for Mavic Ksyrium ES wheelset?

I have an older set of Ksyrium Elite wheels with a 25mm rim depth. Assuming that your Ksyrium ES wheels have the same depth, you might look into Vittoria tubes with a 42mm valve length. I found that the "normal" 36mm valve length was too short, but the 48mm valve length sold by Continental and others looked a bit weird being so long. The 42mm valve length is just right for me. I bought mine at Excel Sports, but I am sure there are other places to find them.

When in doubt, go longer. Nothing wrong with having a little more valve than necessary poking up.

I have used anything from 36mm to 50mm on mine. The 36mm are a little short and you have to push the tube from the other side if it's totally deflated. I settled on 40mm.
