Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Do pedals wear out?

Specifically Shimano road 105 SPD-SL. There seems to be a lot of up and down movement with the way the shoe is held in, makes hill climbing difficult. The pedals are about 3 years old. I have Ultegra version of the pedals on another bike and they are like chalk and cheese, no movement. Is there an adjustment maybe or has something worn out meaning I need to replace them or is it a 'feature' of cheap pedals?

Yep, this plastic bit ("body cover") wears out in the middle, causing up and down movement.
If you're looking for a replacement, make sure you get the right ones, coz the Ultegra and Dura-Ace ones aren't always the same shape
