What is the difference between road and MTB saddle?

i've ridden fizik's on MTB's but don't really like 'em. my current favorite WTB saddle is the SLT Rocket V. the rear of the saddle flares up which helps keep me in place and not sliding around. a good MTB saddle should also have plenty of flex to help with bumps etc. oh and Ti rails are always nice!
i do have a fizik pave cx on my BMC road bike. it seems to work fine for me so far. it has a tiny bit of flex but is obviously much flatter than my MTB saddle. i don't think i could swap saddles on the bikes and enjoy my ride.
p.s. if you don't already have a nice set of bibs, that will help make your ride a bit more comfy.

I use a slightly wider saddle on the MTB because of the more upright riding position. I use a Specialized BG saddle on both MTBs, not sure of the exact model. I use a Sella San Marco, ERA on the road bike.

There are some riders in the Tour de France that actually prefer cyclocross saddles. There was an article by Cyclingnews.com. I can't remember the team, but some of the riders were using cyclocross saddles made by Prologo, even though they had a Prologo sponsorship to ride the road saddles. Maybe, it has to do with flexibility like you guys are saying.
