White gets too dirty too fast, and I'm just not a Double-Tap kinda guy... draw your own conclusion from that.

Depends, are they the same frame?
IMO, you should look for fit/geometry first, then grouppo, then color.
Color should not be a priority decision point. FWIW, it's Dura-Ace, not Dur-Ace.

if you pick based on the color, then I don't have advice for you.

I was just checking out Tarmacs today, test rode an SL3 expert with Ultegra. First carbon bike i've ever ridden, it was amazing. But to answer your question i'd go with the black. Can't go wrong with either one, white is nice but it would annoy me having to clean a white frame all the time. Since you don't care about the color it all comes down to if you want Shimano or SRAM gruppo.

Well..if you go out to specialized.com and look at the specs of each...
I would do the Dura-Ace/Ultegra build, just to keep it to one grouppo manufacturer. To be clear it is a mix of Dura-Ace and Ultegra.
The SRAM build has TRP (Tektro) brakes, and an Shimano Ultegra cassette, KMC Chain (not a bad thing)...with everything being a mix of Red/Force. I would get the dealer to swap casettes in this build.
And you know, a good dealer will swap parts out for you here and there....there will be cost considerations for you though. First and foremost, make sure you are fit properly. Don't be the guy who got so focused on the bike that that was the only thing he was looking at. Either of these two bikes are very nice race ready/level bikes.
I hope I am not being offensive, but based on the question and the way it was worded I get the impression that you are buying (or have it bought for you), and might be getting in a little over your head. I could be wrong though, who knows...

White is such a PIA to clean. If my bike hadn't been on sale and have the components I wanted, I wouldn't have bought it.

stole your bike
Color wouldn't matter to me as much as which gruppo works best for me and that would be SRAM Red because its ergonomics fit my hands perfectly.

Only one of those two bikes have it right in both cases...the right group and the right color.

1) Shimano and SRAM cassettes use the same cog spacing. SRAM cassettes do the missing tooth thing, but you'll get the effects of that which ever group you use it with.
2) I have a bike that's all SRAM otherwise, but I intentionally run a KMC chain instead because I like them better than the SRAM chains.
3) There's nothing at all relevant about the brand of your brakes if they work well.
OP: I think you should ride them both and decide based on which ergonomics you like better.

I read that BMC is offering something like this on their new Racemachine RM01 for 2011. The white, black and red option is coming to stores equipped with SRAM red and the black and green model with Shimano DA.
I'm considering selling my SLX01 and "upgrading" to the new RM01, so if I decide to go that route I would be in a similar situation.
What I'm going to do is go and see the bike and choose which paint job I like better then I'll ask the shop if they can build it up with the parts I want.
In this example if you wanted the "white frame with Shimano" or the "black frame with SRAM" just ask the shop if they can do anything about it.
If they can't or won't maybe just take the frame and build it up yourself with the parts you want on it. Maybe even the shop would be willing to sell you a frame, group set and build at price of as buying the complete bike.
My advice then is to choose the pieces you want on your bike and do what you can or do what you must to get that specific set up. You will enjoy riding it so much more when you don't have to deal with that little voice that says " should of got the other option "

Campy on a grey bike.
Brand of brakes matters, cause Campy QR is at the lever. If you don't care about brake QR, then yeah, it doesn't matter. But the best combo in terms of QR is Ergolevers and non-Campy brakes.
