PD-R540 or PD-M505 for clipless beginner
I just got back into cycling last October as rehab from knee surgery after a long break (nearly 30 years with no "serious cycling", just commuting). I've just been using running shoes and platform pedals for rides up to about 30 miles. I did a little racing and touring back in the seventies with toe clips & straps, but I've never tried clipless before. The bike I just got came with 2 pairs of Shimano pedals - PD-R540 (Look) and PD-M505 (SPD). Any opinions on which would be better for a beginner - mostly in terms of safety - ease of unclipping and lowest probability of falls due to not unclipping?

I have tried both types of pedals(not the exact ones) and I found the SPD style(PD-M505) to be easier to use, but I bought the other kind(look style) because they felt more comfortable to me. I suggest that you start out with the PD-M505 pedals and then switch to the PD-R540 when you feel comfortable.Hope this helps!

LET'S ROLL
You can try getting shoes that will take both 2 hole and 3 hole pedals.
Something like Sidi's. Most shoes will only accept one kind.
This way you can try out both.
