Road bike 26x1 tube and general riding

Road bike 26x1 tube and general riding
Hello,
I've been stalking the forums regularly so I figured I'd make an account. I recently purchased a used trek 2200 and I don't think the rims, tires, or tube are stock. The tire is only labeled as "triathlon" which I've read is often a 26x1 size tire and the tube also said 26x1. The tire is super tight on the rim and even with tire levers almost impossible to get off it took literally 15 mins of pulling and slow progress and I'm normally a boss at changing tires. How can I measure the rim to see what size tires to see if this is the right size tire for the bike?
My question is for general riding and training maybe 100 to eventually 200 miles a week is it alright to have such a small tire? Also would getting a 700cc tire require new rims, tires, and tubes is there another size I should look at?
I'm 5'7" and 160 if that matters.

Road bikes come with 650 or 700 wheels. Most road bikes come with 700, but small size frames sometimes come with 650. They're sized to fit the frame, so you can't change them. Do you know what size frame you have? Worst case, measure the diameter of the wheel, 700 is about 27" and 650 is about 24"

I have a 52 cm size frame trek 2200 year 2001. I went to the bike shop and they told me the rim was actually stock but the tires and tube were indeed slightly small because they are 26x1 rather than the actual size. For some reason I can't remember if they told me 650 or 700
