What is up with my online fit? 6'2" on a 56cm frame?

Today bike frame are sized like clothes. I generally buy a bike one size smaller than my clothes size. I wear L but I ride a M bike.

I'm 5'11" with a 32" inseam, and ride a Giant Defy. Their online chart said I would fit a M-L (equiavelent 56), which would fit someone up to 6'. I also tested a Specialized Roubaix in a 56, and a Specialized Diverge in a 56, and all of them felt a little small. I had a fit expert look at me on a trainer/gig, and no matter what he did, the bikes felt small, and by his measurments didn't work. Why? My arms are a little longer than normal perhaps. I then tested a Trek Domane 58, and a Giant Defy L (58) and that just felt better. I later rode a Trek Emonda and the 58 was a hair long, but felt better. After numerous adjustments to the saddle, bars, stem, etc. on a more thorough fit, everything was dialed in on the Defy, and I happily walked out the door on a bike that by the book was too big for me.

2,000 plus miles later, it still feels perfect.

You're going to have to ride some bikes, and find what fits you closest, then once you get the bike, at least get a basic fit done from an expert.

I'm a shade under 6'1" with a 37" inseam and ride a 58cm frames in a couple of brands - 57.5cm and 58cm top-tubes, respectively. I reckon at your height, you'd be on a similar-sized frame, but the best placed people to tell you this - in the real world and not the interweb - would be a reliable/honest bike shop and/or a professional bike fitter.
