All a fitter can really do is use geometry to help you mitigate problems he observes. Experience will help him ask questions that zero in on issues. However, there will be stuff they just can't see that you need to adjust for yourself. If nothing else, the fitting environment can never be the same as a real riding environment. Moving a part a couple mm or turning it just a couple degrees can be the difference between excruciating pain and feeling fine after a long time. So never be afraid to tweak what they do.

If you're happy with your gf, and want to take the stretching more seriously than recreationally, check your local library for a yoga DVD. This frees you up to focus on your breathing, stretching, relaxing the tension away, instead of the embarrassment of breaking wind and pitching a tent.
