Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Considering how much folks spend on lighter bike components, there's no sense in putting it all back on in water bottles if you don't have to. Considerations for size/number of bottles include weather (temperature and humidity), length and difficulty of ride, availability of rest stops on an organised ride or convenience stores/water fountains, whether you want a separate supply of water vs. energy drink, and bike aesthetics if you think two bottles looks a bit clunky or if you might need to add a non-matching bottle holder for a longer trip. Remember you can take in a lot of your fluids at rest stops rather than while riding.

What are these "rest stops" of which you speak?

I live in the boonies, and it's not unusual to go 30-40 miles with no stores. Weight is the least of my worries.

I use two bottles on my road bike. I usually keep water in one and Gatorade in the other. I'm using a 21mL Podium Chill on the seat tube as the Madone's geometry makes it really tight getting a bottle in there, even on a 58cm frame. I use a larger generic bottle on the downtube.

That's one small bottle. That Madone must have awfully strange geometry.

temperature and humidity are considerations for me. It's fairly typical to be over 100f/38c with RH in the teens for Sacramento summers. I often have two bottles on the bike and another one (or two) in my jersey pocket.

On Sunday's 62 mile / 4,200 ft of climbing charity ride, I feel no shame in saying that I pulled in at both rest stops! I took a second water bottle along (in an ugly black holder) but didn't really need it.

I think I'd rather be the dweeb with two 25oz bottles on my bike than the dweeb walking through Circle K in full kit looking for ice and water. Plus I hate stopping. My legs don't deserve a break.

I agree whole-heartedly with this entire post.

I have a 60cm frame. Might as well use the space.

When it gets crazy hot during the summers here in SW Florida I carry two Camelbak Podium Big Chills in the 25 ounce size on my bike and often a small cheapo bottle in jersey pocket. Then during the winter I switch to the 21 ounce Cambelbaks.

I always carry two bottles and when the first one is empty, it's time to be looking for a store or gas station. On some rides, watering holes are few and far between; I've had to beg water from strangers in the country before. So far, I've not knocked on the door of a meth house. Or refill from a stream or spring. Lots of riders here will carry a third bottle in their jersey pocket in the summer time.

Seriously, far better to carry too much water than be caught with empty bottles and miles to go before you can get more water.

I had to turn in my OCP badge when I could no longer afford a SAG vehicle on my rides. Now that was the way to ride. Just wave, and a bottle is handed to you.

I forgot to mention, I have Camelbaks and Polar bottles and like the Camelbaks better because they stay cold longer and they have the "jet valve".
