Oversized saddle bags

Unfortunately my back is beginning to rebel against carrying a heavy book bag while I commute. I'm going to look into storing my belongings into a large saddle bag and-or a front bag.

What are my options? I need around 1,700 to 2,000 cubic inches of space.

Get a rear rack and panniers.

Burly Travoy trailer, then you wheel it around school with all your books and stuff in it like a hand truck..

Assume you posted here because you only have a stripped down road bike .. all you will add is the hitch to the seat Post.

saddle bag? British Carradice , they make handle bar bags too .. saddle needs bag loops on it.

fiestbob already mentioned Carradice, which is the saddlebag I used for commuting (and also some shorter touring rides). Note that some of these larger saddlebags need a decent amount of clearance under the seat and above the rear tire.

These are big bags and are usually paired with a light rear rack.
If you lock your bike outside and want a quick release for the bag: Nitto Saddlebag Grip

So what size do you want/need? In your OP you indicated 1700 - 2000 cu. in. were needed so I and others referred you to bags with about that much capacity. Now you reference a couple bags with a maximum capacity of less than half that much and say they seem perfect.

I may have over estimated my needs. When I'm headed to work I'm usually carrying an Ipad, smartphone and chargers, an extra pair of shoes, my wallet, a small bike lock, and some snacks. Getting a bag that exceeds the carrying capacity these items require is fine though...
