Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

It's the Mexican interpretation of the vertical spit. For al pastor tacos! I guess if they get really popular, they'll have to scale it up a bit:

So answer me this. Why are tacos al pastor made out of pork? Shouldn't they be made out of lamb. Are shepherds surrounded by free lamb so they pay to eat pork? Makes no sense.

In Islamic cultures, it is called schwarma.

Dunno. Lamb tacos are called birria, tho.

I had the enchiladas special for dinner. Four enchiladas - beef, chicken, cheese, and bean. No lamb.

I made fake Chipotle burritos for dinner. Beans, doctored rice, marinated and grilled chicken, cheese, avocado, salsa, sour cream. I can't find those manhole cover sized tortillas, though, so we have to settle for burritos smaller than our heads.

Sometimes goat. Usually lamb or mutton (sorry @coasting ) around here, though.

Maybe I should set up a mail order business from Houston to supply big flour tortillas to the frozen wastelands. They are everywhere here. But the packaged ones at the supermarkets mostly suck anyway. House-made like at the best Mexican restaurants just can't be beat. Even the house-made at burrito shops are really good compared to packaged from the supermarket.

Is there any Mexican restaurant where you are that makes flour tortillas in house. Maybe they would make a run of really large ones for you special. I think they freeze well as long as you keep them from drying out.

I've been working at a new bike shop for a few days now.

I've totaled a net loss so far.

But I got a NOS 7800 crankset.

Test spin on the trainer went something like this: whhuummp whhuummp whump whump whumpwhumpwhumpwhumpwhump

Guess I need to work on that whole roundness in wheelbuilding thing.

Yes they do, and proud of it too. But I'm talking about Ninfa-type tortillas. Mama really had that one knocked. Translucent, tender and moist. Best I have ever tasted. Take a look:

Remembering Ninfa, the mother Houston called 'Mama' - Houston Chronicle

Don't feel bad. It is, without a doubt, the hardest part.

Another learning experience. I sat down with it for the last half hour or so, tightening here, loosening there. Writing with a dry erase marker on the brake track came in pretty handy, marking high and low points, making adjustments, followed by a rinse/repeat with smaller adjustments. It's now pretty round and true and the spoke tensions are consistent. The next set will be better... the next set will be better (and I'm buying some damn bladed spokes next time).
