I made fake Chipotle burritos for dinner. Beans, doctored rice, marinated and grilled chicken, cheese, avocado, salsa, sour cream. I can't find those manhole cover sized tortillas, though, so we have to settle for burritos smaller than our heads.

Is there any Mexican restaurant where you are that makes flour tortillas in house. Maybe they would make a run of really large ones for you special. I think they freeze well as long as you keep them from drying out.

Maybe I should set up a mail order business from Houston to supply big flour tortillas to the frozen wastelands. They are everywhere here. But the packaged ones at the supermarkets mostly suck anyway. House-made like at the best Mexican restaurants just can't be beat. Even the house-made at burrito shops are really good compared to packaged from the supermarket.

Another learning experience. I sat down with it for the last half hour or so, tightening here, loosening there. Writing with a dry erase marker on the brake track came in pretty handy, marking high and low points, making adjustments, followed by a rinse/repeat with smaller adjustments. It's now pretty round and true and the spoke tensions are consistent. The next set will be better... the next set will be better (and I'm buying some damn bladed spokes next time).
