I think you should give it more time. Possibly go to your LBS and ask them to explain the benefits of the different types of saddles. Also invest in really good bike shorts, if you have not already....

I picked up an Elite at Supergo in Mountain View for $1750.00 this past Sunday. I chucked the wheels and used my old set of Mavic Open Pro CD's. It's a sweet ride. I could ride all day on this thing.

You probably need to change your rear cassette. As a chain wears, it wears out the cogs also. A worn cogset will not mesh with a new chain.

I just changed my cassette to a 12-26 and it seems to be fine. Looks like the same grade as the Ultegra or 105 stuff. Anyway it shifts just as well and saved a few bucks.

Thats a sweet ride. I bought the Elite Triple Cromo. I chucked the wheels and replaced them with Mavic Open Pro CD's along with a tighter cogset 12-23.
