I'd just recommend staying on the bike paths. Long enough to tire you out, but sadly flat, so just go fast. The side roads didn't always have room for a cyclist, so that can be a little scary.

I've used Gatorskins & Armadillo's, 700x28 and they are good too.
The 700x32 give you more options on rough ground.
