For the NYC Century they stagger the start not by ability but by distance, which amounts to almost the same thing. The 100 mile riders start first, then the 75 milers, etc...

I did this once on my mtb and regretted it. Road bike all the way, although I guess a hybrid would also work. 40 miles of road on knobby tires was just too much.
