You can always shift to the 12, even on my bike with short chainstays it works fine. Or run an 11-28. Like you said there is no perfect solution for all situations, just MO but 50/36 works better...

90rpm is fast? Obviously the small ring isn't meant for extended use on easier terrain but the 36 makes it more useful for that purpose than 34. 39 is even better if a 39x27/28 is the lowest gear...

Yes, but 36x13 gets you 20-25mph which is very useable on the flats, compared to 19-24mph with the 34. That 1mph difference is in the sweet spot for flats

Capacity is only somewhat important. Like you said it is usually conservatively listed, and it only affects the 1-3 smallest small/small combos which in general should be avoided anyways.
