Quicker/Easier Clip-Out than Candy?

I've been using Candy C pedals, but have to rotate too far to get out. Is there something I can get that will get out of easier or with less rotation? These are hard on my knee.

"Mountain Bike" Shorts or regular Cycling shorts?

Do you wear the dedicated "Mountain Bike" shorts that look like regular cargoes? Or does anyone just wear regular padded cycling shorts under a pair of athletic shorts or cargoes? Opinions?

Simple straight bar SS?

I'm looking for a basic, inexpensive but not cheap single speed with a straight bar. Think Trek Soho S without the price tag. What are my best options to buy new?

Have you tried Specialized? I have a long torso and shorter legs at 6'1. I rode a Specialized 29er and it was all wrong for me, but since you're set up differently it may work for you.
