Old Steel Hybrid for CX

Looking for recommendations on older steel hybrids that I can turn to a CX/gravel bike. I did this to my specialized sirrus and it's working great but would like to try a steel frame.

Bars and seat post are great options, I'd also like to mention getting measured for the right sized saddle and better tires for your riding purposes. Most stock tires aren't great.
