Mine was made about 80 frames after that one, but has a different seat tube decal color (pewter) and pewter-colored head tube. Odd.
1981 Trek 710s are great bikes. I'm a big fan.

I have a '85 Miyata 1000. It is a terrific bike. I am modernizing it as well with brifters, new 130mm wide wheels, 9-speed.
I think it's worth it.

Good luck!

I have not been the area you discuss, but had a great experience riding in the Limburg region two years ago. It was flat, rural, intimate and thoroughly enjoyable. Good luck!

I have a set of modern Ultegra hubs laced to Open Pros. They have been trouble free. I have 28mm tires on them and it serves on a commuter bike. Great value in my opinion.

My first road bike was a Motobecane Super Mirage, the exact model year you have and one size larger. I bought it in 1983 and have fond memories of it.
Ride and enjoy it!

If the B-17 works for you, why change?

I have two B-17 that I like. I also use a Brooks Swallow, a SMP Glider and a SMP TRK (on a Miyata 1000). I'm happy with all of them.
