I believe 3400 & 3500 shifters are both Super SLR, which will work with 5700 brakes. 5800 brakes are Super SLR-EV, which has a different pull ratio.

Fizik's Antares saddles are close to the same width as the Donna Arione, so you always have those manly options available. That being said, you probably won't get any men's 00 saddles for anywhere...
