Tires and Rim Widths

Are their any guidelines out there concerning putting larger width tires on rims used for smaller width tires and vice versa? What do you sacrifice in tire performances in making those choices?

The 105 carbon has "Shimano 105 52/36 with Praxis Works PF30 BB adapter". I don't know why they would change cranksets on alloys to FSA's 50/34.
