I think it all depends on your level of stress tolerance... Besides, the exhaust fumes from the traffic there are also a concern. There are just too many cars, too many trucks. It's a major artery...

I'm sorry, but Sunrise Highway is not bikeable.. It's very busy, with annoyed drivers during rush hour and parkway speeds during off hours... I live near by, and Sunrise Hway is my main throughway...

I made snack and lunch stops during the metric, and definitely planning on taking breaks during the full. I think it all depends on how flat the terrain is and what the average speed during the ride...

About the short stem handling... I had to downsize the stem on my bike as well, due to reach problems. Replaced the 90mm stem with a 60mm. I was very worried about the handling, but did not notice...
