If you have consistent knee problems I highly suggest finding a local orthopedic that makes cycling insoles and have your insurance pay for them. Nothing is better than truly custom insoles.

Very wise words. The best brevet bike to start on is the one that is most comfortable and fits the best. A small fit issue at 125 miles is generally a pretty big fit issue at 250 miles.
