Damage isn't always obvious, the only way to check in a reasonable amount of time is to tap it- any delaminated spots will sound very different. And congrats! That means you also have a power meter....

Nope! You may have to replace cables/tires/tubes, but those should be the only thing that would suffer from age. Just make sure the carbon is in good shape and you don't see any rust anywhere.

Storck makes some super bling bikes, but they're also fairly pricey. But they also don't make any bad ones, so if you can afford one go for it. German engineering is da bomb.

I would assume that it would all fit fine on your bike; they seem to have no problems shoving 11 speeds onto the same area as 10 before. And if you're looking at wanting this, you could get by...
