    Very nice looking bike. I like the choice of components. Still retains the vintage look. I don't think you need 27" wheels. My Grand Jubile is stock except for the wheels which are 700c sew-ups.

    I would only replace the RD with a Huret and the Araya rim with a Weinmann, clean and lube all the bearings, replace cables and brake pads and ride it.

    I just finished restoring a Fuji mixte frame with clearcoat over waterslide decals. The clearcoat helps protect the transfers.
