Ages 81 and 79 . . . we can't be that old and still have fun!?
Commuted to work for 16 years; never used a backpack but did have a rack and bungee cord; no fenders as I live in Southern Arizona
where we get about 5 inches of rain annually.
In stead of a TT do a mass start road race . . . takes less time.
Park and lock the bike outside of where you work. Keep a small tarp handy to throw over the bike in case of inclement weather.
Co-incidentally, that is the exact setup we have on front of our Zona (D/A brake+Alpha Q) for the past 40,000 miles! Have no reason to change that setup.

Make a habit of spinning both wheels before you go on a tandem ride . . . then grab the brakes and do it again.

Had a similar instance about 14 years ago.
We were test riding a prototype carbon fiber eccentric on our Zona tandem, weighing just 100 grams.

Have used that fork for 40,000 miles so far on our Zona tandem. No issues. We are a sub-250 lb team

The Kidz tandem is a unique idea. Have seen them at the Interbike trade show but never ridden one. Have ridden over 30 brands/models of tandem bikes in our 40+ years as a tandem duo.
Solution: put on a rear brake but don't use it . . .
At age 81 I still pedal 5,000 miles a year and have cycled over 300,000 miles (240,000 of them on tandem with my wife).
In my opinion cycling did not affect my prostate, but probably 'old age' was...
At age 81 I have slowed down a bit. Not as fast, not as far, but still ride 6 days a week.
Spouse and tandem partner rides tandem with me every other day, but she is only 79.
