Making shrimp and grits for dinner. So good! The shrimp are peeled, the ham is diced, the onion is minced, and the shiitake mushrooms are sliced. Still need to chop the fresh thyme and tomatoes and bell peppers. (I also add a shot of freshly brewed espresso to the grits.)
Yesterday I made pancakes in the AM, but they were oatmeal pancakes made with buttermilk. I eat mine with red currant jelly, but everyone else ate them with ligonberry jelly. Pure sin.

Tonight I made duck tacos with duck meat left over from the holidays. I also made fried green plantains (tostones). Very YUM!

I have 8 lbs of (pork) spare ribs spice rubbed and sitting in the frig. Tomorrow afternoon they will be hickory smoked because I know that my house will get inundated with family and friends. They will want to watch Tebow. While they are watching I'll be doing dishes.
I'll also be making some lemony potato salad. It is like dessert. It is that good.
Still thinking about what to serve that is green.

Ribs are cooked. Potato salad was made this morning. Pole beans are boiling.
And the in-laws are here and they took over the TV and are watching Lawrence Welk.

gf and I are cooking some homemade parsnip patties:

whole wheat flour

in order of abundance.
they're very yummy. They don't need any more spice, but I would like to experiment next time.
I'm thinkin paprika and just a lil bit of garlic powder.

My wife showed up last night with three enormous heads of cabbage fresh from somebodies garden, so I was tasked with making a tasty dinner that featured cabbage,
First I made a garlic, caraway seed, salt, and pepper rub for some pork tenderloin. That sat in the frig for a bit.
Next I sautéed yellow onion and carrot in olive oil for a bit and transferred that to the roasting pan. . Then I wilted the cabbage in olive oil and caraway seeds. This consumed one huge head of cabbage. All this went into a roasting pan.
The pork was then seared in the same skillet and placed on top of the veggies. Then a bottle of beer and 2 tablespoons of molasses were brought to boil in the skillet to bring up the brown bits and all of that was poured over the pork and veggies to be placed in a 350 F oven.
Earlier I roasted a head of garlic in the oven for garlic mashed potatoes. That is all set and ready to go.
In the middle of this my wife called and said that she forgot that she has to go to some local lawyer dinner thing tonight.
Oh, well. It will make great leftovers.

Been eating Trader Joe's high fiber cereal, 120 cals/cup, or oatmeal and nonfat milk. chicken/rice bowl for lunch (should be veggies instead of rice) and chicken/fish and veggies then non-fat yogurt/fruit for dinner. I have quite a defecit just from that. Throw in a ride and I'm pretty low so I'll eat a clif bar and a mid-day yogurt/banana. On ride days I definitely eat more carbs. Needs some tweaking but I'm on a mission to lose 10 lbs. GL all.

So, tonight is my FIL's "official" birthday dinner with far-flung family arriving in town (2 came from France yesterday) and many local friends in attendance. My wife and I asked last night about what was on the menu because we wanted to bring the wine. Somehow in the conversation it turned into me cooking dinner for about 16 people. That's OK. I like cooking. I won't have to make the salad (but I have given explicit directions!) or the dessert, but I do have to make the main course.
It will not be as fancy as his actual birthday dinner. I'd go broke buying that much filet mignon.
And I'm still bringing wine for both drinking and deglazing.
