    I just ate two (2) Russel Stover Truffle Eggs. Covered in milk chocolate. They were awesome. Like an orgasm for my mouth. Not to be confused with an orgasm _in_ my mouth. Please let's be clear on that. 140 calories each.

    Taking advantage of being a few days after Easter. Lamb chops are on deep sale. Marinading them in olive oil, garlic, chopped fresh oregano, ground cumin, chopped fresh thyme, and freshly ground pepper as I type. I will skillet cook the lamb and then cook grape tomatoes (marinating in the same juice but different bowl) in the same skillet.

    Water is on the boil for orzo that I will herb with flat leaf parsley and chives from my garden and some fresh thyme that I bought,

    Arugula and herbed orzo below, then lamb chops, and finally crumbled feta and cooked tomatoes above.

    I s**k, Hardly want to list what I ate but I guess acceptance is the first step of anything right? Easter Bread, 3 hardboiled eggs, a little cake, some ricotta pie, pizzagana, lamb, a few apples, an orange, some cat cookies, some goldfish, and some cereal.

    I HATE rest days.

    About 50-70 grams of carbs in the last two days.
    No more than 1500mg of sodium since yesterday morning.
    Getting delirious I believe, veiny as hell though - down 8 pounds since the beginning of the week.

    Last night: avocado and corn soup with cilanto oil and a dollop or sour cream and brussels sprouts with pine nuts, shallots, marjoram, and cream.

    Tonight, left over brussels sprouts (I made a lot!) and "beer can chicken" along with corn on the cob.

    Have to focus on the non-eating status....Off the bike makes for waist line watching...

    Chicken is in the oven, rice and veggies on the stove...Supper is good...

    Lunch not so much....

    3 eggs scrambled with a dash of milk and maybe a cup of shredded cheese. and a big dollop of salsa.

    this plus a few cups of coffee will fuel me the rest of the day (not riding tonight)

    I have some pork tenderloin rubbed with freshly crushed caraway seed, garlic, salt, and pepper in the frig. I'll take it out in a few minutes to get to room temp.

    In a while I will sauté onion and carrots with some more caraway and bay leaf. Then I'll wilt a whole head of cabbage (except for the core). All of this gets transferred to a roasting pan.

    Then I'll brown the pork and place it in the pan. Then I'll deglase the sauté pan with beer and a little molasses and pour over the pork. Then in the oven for 45 to 60 minutes.

    Meanwhile I'm be boiling some diced potatoes for making German potato salad. Vinegar, bacon, herbs, and potatoes FTW!

    My wife said today that she wants chicken mole tomorrow. Making mole from scratch is a lot of work. I did find the right peppers in town (mulato, pasillo, and ancho) and I have some excellent Peruvian chocolate. I follow the recipe from Fonda San Miguel in Austin, TX.

    I figure that it will take about 3 to 4 hours of work and so much better than opening a can for the sauce.

    No prolem.

    And after I seeded all the peppers this morning my wife said that she wants the mole later in the week. Instead she wants me to rescreen a porch at a house that we rent out today. I'd rather be cooking.

    BTW, shovel, I have 24 Datil pepper seeds sprouted. In September I should have a bunch of ripe ones. I'll send you a bunch.

    Ahi Tuna burrito following a 63 mi 233 TSS ride. Coupled with the incline the other day I could barely walk when i got back to the car.

    I made the mole this afternoon. Holy - Mole! OMG is it the yum.

    Rice is cooking and the par-boiled chicken from early in the afternoon will be submerged in hot mole soon. It was a double batch of mole, so some is going to the frig or freezer.
