When I went from Shimano to Pearl Izumi, I removed my pedals, clipped in, and then took the shoes off of my feet. I felt for the bump behind my big toe (along the side of my foot) and marked this on the shoe. That allowed me to see where it was relative to the position of the spindle. Unclip from old shoes (you'll probably have to put the pedals back on the cranks to get unclipped), install cleats on new shoes, and repeat. I got them close enough that I ended up not having to adjust later.
