Cameron Park is supposed to have an awesome MTB trail. A lot of the Dallas guys say its the best.
If you're into this sort of thing, you gotta see the Texas Ranger Hall of Fame Museum. Its got some cool history and tons of unique guns.
Also check out the Dr. Pepper museum.
One of the neater things about Waco is the old suspension bridge over the Brazos. Doesn't take long to see it, but definitely worth a few minutes to look it over.

Thanks for the tips, rode around town today.Saw the Ranger museum and the suspension bridge. Will do some more riding tomorrow. After all, what else am I going to do at a truck stop, might as well ride.
There's a charity ride in Waco, and the route maps are online, if you're looking for more milage. I haven't ridden the ride, so I can't comment on how good the routes are. http://www.wacowildwest.com/tour.html

I rode the WWW century this year. Its mostly a quiet, rural route. Unless you're used to riding self supported for that long, it might be a bit much.
A century is a bit much for me at this point.Farthest I have gone is 30mi,still building up me mileage.
